I'm turning over a new leaf....

I used to cook a lot, and then the summer rolled around and we were going on trips, and packing to move and I got lazy and started cooking less and less because we weren't home long enough to use the ingredients and food was going bad, etc.... I got pregnant and then the cooking was really non-existant for about 2 months, but last night Cary said "Enough, is enough!" Ok, he didn't really say that, but in a round about way he was saying that he is tired of canned soup, frozen meals, lean pockets, and frozen pizza. Soooo, I've resolved to start cooking again, but I need your quick go to meal suggestions that you like to make at home.

Quesadillas...lol Seriously, throw some ground beef and some black beans in there and you've got it made. Probably not what you were thinking of though;) Marinated chicken (You have to think ahead a little), stroganoff, stir fry, roast and then stew, etc. from leftovers...

I'll have to think about it. I actually typed up menu ideas once, I'll have to look for it.

One of the few quick dinner ideas that I usually fall back on is pasta. My newest favorite is as follows:

1/2 box of ziti noodles, boiled
1/2 yellow, red, or green bell pepper
1/2 red onion, roughly chopped
12- 1 cup of chopped broccoli
White wine
Chicken broth
Italian Seasoning
Garlic powder


Saute all the veggies in a bit of olive oil until tender, add about 1/2 a cup of white wine and 1/2 a cup of chicken broth. Cook over medium heat until the sauce reduces. Add in italian seasoning and garlic powder. Toss sauce/veggie mix into pasta, top with parm. cheese and enjoy!

It's actually really fast and it makes me feel like I'm being healthy since I'm not using alfredo sauce. :)

Oh, I get alot of great ideas from watching Rachel Ray's 30 Min. Meals show on Food Network and from http://www.kraftfoods.com/kf/Dinner/MealsInMinutes/Take5.aspx They have tons of great, simple, and quick recipes on there.

Pasta is a favorite, especially the tortellini and ravioli that you buy frozen at the store and cooks in just a few minutes. I also do a lot of casseroles because they make wonderful leftovers and then I don't have to cook every day. :)
